There are things happening in this house that cannot be talked about on a food blog because it would be wrong. The results of some type of food borne virus or bacterial something or rather have roosted here.
And you know how and why that happened? (Besides the fact that my kids are exposed to all kinds of god-knows-what every day of course) because there is this crazy little thing called Murphy’s Law. Heard of it? If not, the just of it is this: if one’s husband goes out of town, than one’s children thrown up all over the place. If you are lucky than the dog does not follow suite with some similar type of nonsense- but with Murphy’s law in effect, you are probably not going to get that lucky!
And then, the flip side is that when one’s husband comes home, everyone feels great! (meaning the kids). But probably, if you are me, you personally look like living hell and as though someone stuck you in the blender and hit frappe. Pretty! Huh?
With all said and done, and my husband back and my children digesting food again and my own stomach feeling solid….I need a drink. And guess what it is? A maaaargarita! Frozen and slushy with mango chunks and then topped with a bit more of the slushy that I added fresh micro basil too (basil leaves would work exactly the same way). I love the blend of the mango, basil and lime- it is somewhere between a Mexican and a Thai margarita! But whatever it is- I love it- delicious. Please try!
Recipe: Frozen Mango Basil Margaritas
Ingredients
- Mango Margaritas:
- 1 10 ounce bag frozen mango chunks
- 1/2 cup fresh lime juice
- ¾ cup tequila
- ¼ cup Grand Marnier or Cointreu
- ¼ cup simple syrup
- 2 cups ice cubes
- 1/4 cup loosely packed Basil leaves (or micro basil)
- Simple Syrup:
- ½ cup water
- ½ cup sugar
Instructions
- For the Simple Syrup:
- Bring to simmer for a few minutes, whisk until the sugar is dissolved and set aside to cool.
- In the jar of a blender, add everything but the basil and puree until smooth and slushy. Reserve 1/4 cup of the mango mixture and split the rest between 4 glasses.
- Add the 1/4 cup of margarita back to the blender along with the basil and puree until smooth and bright green. Spoon the basil mango mixture over the top of the margarita. Serve with fresh lime.

Side note: I think the first step to make the margaritas needs to read “Add everything except the basil…”
